Sometimes referred to as brown lentils. Use for vegetable gardening and sprouting. A staple of Indian cuisine (Daal), these green lentils do well in cooler temps and can be planted after the last frost of spring in soil with good drainage. A relative of peas, lentils grow in pods containing one or more lentils per pod. Harvest when pods rattle, but before they start to split. For sprouts, pre-soak for 6 to 8 hours and rinse several times daily. Sprouts are ready in 2 to 3 days. Popular in Mediterranean and Indian cuisine, and used all over the world in soups and stews.
